If you have any leftover hummous that isn’t quite enough to save for another day, simply add some lemon juice, shake it, then some olive oil and salt and shake it again for a lovely, creamy dressing to go over a spinach leaf salad. If you have some leftover lamb as well, then bingo – add this to the salad, along with some chopped red onion, roasted butternut squash and toasted pine nuts for a fabulous leftover dinner.

You can also use wholegrain tahini for a slightly nuttier version.
